GREEN POSOLI SOUP

Ingredients
I WHOLE CHICKEN1 ONION CUT UP3 ANAHEIM PEPPERS3 JALAPENO PEPPERS3/4 POBLENO (PASCILLA) PEPPERS1 tBSP OIL1 # 10 SIZE CAN HOMINY (DRAINED)1 WHITE ONION CHOPPED1 BUNCH RADISHES CUT UP1/2 HEAD LETTUCE CUT UP3 LIMES CUT IN HALFOREGANOSOUR CREAMTOASTADO SHELLSSOUR CREAM
Directions
COVER THE CHICKEN WITH WATER. ADD CUT UP ONION AND COOK UNTIL TENDER. COOK, DEBONE, REMOVE SKIN. ADD BACK TO BROTH. REFRIDGERATE UNTIL FAT IS ON THE TOP (OVERNIGHT WORKS GOOD) THEN REMOVE ALL THE FAT.
ROAST PEPPERS UNDER BROILER, TURN UNTIL THEY ARE NICELY ROASTED, BUT IN A PLASTIC SACK FOR 10 TO 15 MINUTES. (wearing plastic gloves) remove the skins. take the outleaves off the tomatillos and fry in oil until tender and slightly brown. Blend Tomatillos, peppers and some of the broth, add all together. add hominy simmer until warm. Garnish with lettuce . radishes, and oregano/ add lime juice from the limes. Can add Toatado shells and sour cream.
note ..you might want to taste test ( ir just smell them) the peppers before blending, if they are too hot they and ruin the soup!
