Spinach and Feta Stuffed Chicken

Ingredients
* Chicken Breast, no skin, 16 ounces * Olive Oil, Extra Virgin, 1 T * Garlic, 2 clove * Portabella Mushrooms, 3.5 oz * Spinach, fresh, 3 cup * Feta Cheese, .5 cup, crumbled * Progresso Bread Crumbs - Italian Style, 0.25 cup
Directions
1. Pound chicken breasts thin, season with salt and pepper if desired
2. Saute garlic and mushrooms in olive oil on medium/ medium low heat
3. When garlic is browned, add spinach, cook until wilted
4. Add mixture to feta cheese and stir
5. Take filling and split equally among the chicken breasts
6. Carefully roll up the filling in the chicken and secure with bamboo spears ( I use three each, about 3 or 4 inches long, toothpicks would probably work in a pinch)
7. Place in baking dish and sprinkle bread crumbs over chicken

Bake at 400F for 35 minutes or until chicken is done. Makes 4, 4oz servings
Serve with favorite side (I like quinoa and/or green beans)

    Made this tonight for dinner and it was a big hit. I used crushed Fiber One cereal for the breadcrumbs with some greek and Italian spices added to it. I will use this recipe often! :-) - 11/27/10
