lower fat crab cakes

Ingredients
350 grams of crab meat (I prefer fresh)1/2 cup of egg whites3 tbsp low fat mayonaise1 tsp each of dijon mustard, worcheshire sauce, hot sauce1/2 cup or unsweetned shredded coconut15 toppable or ritz crackers crushed (approx 1/2 cup)2tbsp each of minced red peppers and onions1 tsp of minced garlic1 cup of panko bread crumbs or regular bread crumbs..but for browning i prefer panko(divided into 2 1/2 cups)sea salt, pepper and fish seasoning to taste (i use 2 tsp)
Directions
Mix all ingredients into bowl (leaving half of the panko bread crumbs onto plate).
Mix well.
Shape into 8 patties (approx 1/2 cup per pattie)
place in the remaining panko bread crumbs and turn over once to coat. Place on plate and cover with wax paper for at least 2 hours.

Heat oil of choice in fry pan and place cakes into pan, turning once after about 3 min. Serve with sauce of choice. i like em with just a squirt of lemon juice and sea salt. sooo goood!!!
