Crust:1 1/2 Cups Graham Cracker Crumbs, chocolate 2 Tablespoons Canola Oil1 Tablespoon Coffee LiqueurCheesecake:8 Ounces Firm Tofu1/2 Cup Part-skim Ricotta Cheese4 Ounces Light Cream Cheese1/3 Cup Maple Syrup2 Egg Whites1 Egg3 Tablespoons Coffee Liqueur1/4 Cup Cocoa Powder
1. Mix the graham cracker crumbs with the canola oil and 1 tablespoon coffee liqueur. Then press into a 9-inch spring form pan.
2. In the bowl of a food processor, combine all remaining ingredients until smooth. Spread over the crust and bake for 1 hour. Chill in the refrigerator overnight before serving.
