Chocolate Chip Power Muffins

1 1/2 cups brown rice flour1/2 cup soy flour*1 cup rolled oats**1 cup oat bran*1 cup non-fat dry milk1/4 cup flax seed meal1 cup cooked garbanzo beans, or 1 can drained2 tsp baking soda1 tsp salt2 tblsp cinnamon1 tblsp vanilla extract2 tblsp orange peel1 cup grated carrots1 cup grated zucchini2 oz pistachios, chopped2 oz almonds, chopped1/2 cup raisins1 3/4 cup chocolate chips2 eggs2 1/2 cups 2% milk3/4 cup packed brown sugar* Oats & oat bran are normally NOT gluten-free in the U.S. You can find a gluten-free brand at most health-food stores.
Mix egg, milk, sugar & vanilla in a large bowl. If using canned beans, rinse and drain well. Mash beans and stir in to egg mixture. Mix in veggies, nuts, orange peel, raisins & chocolate chips.
In another large bowl, mix flours, oats, bran, dry milk, flax, baking soda, salt & cinnamon. Gently stir into wet ingredients, mixing only enough to blend.
Pour into muffin cups. Bake at 350 F for about 30 minutes, checking after 20 minutes.
Makes 3 dozen (36) muffins.
