Boiled Ham & Cabbage Dinner

Ingredients
4 C. Chicken Broth (or substitute low-sodium or vegetable broth)6 slices Lean Ham (1/2 of a prepackaged ham or from a baked ham)3 C. Carrots5 Small Potatoes 1 Large head cabbagePepper - to taste2 tsp Garlic powder 2 tsp Onion powder
Directions
Pour broth into a large stock pan. Add ham slices, pepper, garlic powder, and onion powder. Bring to a boil then reduce to simmer for 30 minutes, covered.

Chunk potatoes and slice carrots. Add to the simmering broth/ham mixture, cover.

Once fork easily goes into potatoes (about 20 minutes), add cabbage cut into wedges. Continue simmering, covered, until cabbage cooks down and is tender. (About 15 more minutes.)

This recipe can also be done in the slow cooker. Adding all of the ingredients together and cooking on low all day.

    Very good, we just use water though and not chicken broth to save on sodium - it just turns into a nice flavored soup based on the ingredients. - 1/5/12
