Easy Chicken Stir Fry

1/4 cup Chashews1 1/2 cup chicken broth2 Tbsp. Orange juice2 Tbsp. soy sauce2 tsp. coenstarch2 tsp. sesame oil4 skinless, boneless chicken breasts (about 6 oz each)Cooking Spray1/2 cup snow peas1/2 cup water chestnuts1 cup fresh broccoli florets
1. Toast the cashews in a large skillet or wok over medium heat until lightly browned, 2 - 3 minutes. Set aside. In a small bowl, mix teh broth, orange juice, soy sauce, cornstarch and sesame oil. Set aside.
2. Using a sharp knife, cut the chicken into bite-sized pieces. Spray skillet with cooking spray. Add the chicken; stir-fry until browned, about 6 minutes.
3. Add the vegetables to the skillet. Add cooking spray as needed. Stir0fry the mixture for approx 3 minutes. Stir in the sauce and bring to a boil. Reduce heat and simmer until the sauce thickens, 2 - 3 minutes. Stir in the toasted cashews. Serve immediately.
