Clean Eating's Quinoa and Black Bean Salad

1 C quinoa2 C water1/4 C olive oiljuice from 2 limes1 tsp cumin1/2 tsp red pepper flakes1 can black beans, rinsed1 1/2 C cherry tomatoes,cut in half5 green onions, chopped1/4 C fresh cilantro, choppedsalt and pepper to taste
Wash and rinse quinoa. Ina saucepan, bring quinoa and water to a boil. Reduce and simmer, cover and cook until all water is absorbed, about 10-15 minutes. Let cool.
In a small bowl, whisk oilve oil, lime juice, cumin and pepper flakes.
Combine cooled quinoa, tomatoes, beans, and onions in a large serving bowl.
Drizzle dressing over salad and toss in cilantro. Season with salt and pepper.
