Tasty Thai Curry Couscous

-1 cup carrots, chopped-1 cup onions, chopped-1/2 green bell pepper, chopped-1 Tbsp. Extra Virgin Olive Oil-3 cups chicken stock (or veggie stock)-2 tsp salt-1 tsp black pepper-1 Tbsp. curry powder-1 cup couscous, dry-1/2 cup fresh cilantro, chopped
1. Chop carrots, onions, and green bell pepper. Combine in pan with extra virgin olive oil and saute for 2-3 minutes.
2. Add chicken stock, salt, black pepper, and curry powder. Place lid on pan and bring to boil.
3. Once boiling add dry couscous to pan and remove from heat. Replace lid and let sit for 5 minutes until couscous has absorbed all liquids. Add cilantro to top and enjoy.
Makes 6 serving.
*This recipe is great as a main dish or side. You can also add chicken, beans, or veggies like green onion to diversify your dish. Using vegetable stock works well too, although you can then generally omit salt.
