Blueberry Cobbler

Ingredients
• 4 cups fresh blueberries• 1 tsp lemon juice• cooking spray• 1 cup all-purpose flour• 1/2 cup sugar• 1 tsp baking powder• 1/4 tsp ground nutmeg• pinch of salt• 1 Tbsp vegetable oil• 1/2 tsp vanilla extract• 2 large egg whites, lightly beaten• 3 Tbsp sugar• 1/2 tsp ground cinnamon
Directions

PREPARATION
• Preheat oven to 350 degrees.

• Combine blueberries and lemon juice in a baking dish coated with cooking spray, stir.

• Combine flour, sugar, baking powder, nutmeg and salt into bowl, make a well in center. Combine oil, vanilla, and egg whites, stir with a whisk. Add to flour mixture, stirring until moist.

• Drop dough by spoonfuls onto blueberry mixture to form 8 dumplings. Combine 3 tsp sugar and cinnamon and sprinkle over dumplings.

• Bake at 350 for 30 minutes, until filling is bubbly and dumplings are lightly browned.

    This recipe is easy to make and delicious. The topping is low fat but light and tender. I also tried it with peaches. My advice is to use small spoonfuls for the topping so you won't be tempted to eat more than one portion! - 7/10/10

    This cobbler is delicious! However, the wet ingredients were not enough to make the dough appropriately. I added 1/4 cup of low-fat milk and it turned out perfectly! I've already passed along the recipe to several friends who asked for it! - 3/7/11
