Low Carb Stuffed Peppers

3 Peppers, sweet, red, fresh, to roast5 Peppers, sweet, red, fresh, to stuff1 medium Onion, diced8 oz Turkey, Ground turkey, 93% lean8 oz Ground beef, lean1 c Celery, diced 1 c Mushrooms, pieces 1 tbsp Fennel seed1/2 c Parmesan Cheese, grated
Roast three peppers, clean and skin with enough time to let cool before cooking.
Preheat oven to 350. Dice all vegetables and garlic
Brown ground turkey and beef, drain. Add all onions, garlic, mushrooms, celery oregano, seasoned pepper, fennel seed and roasted peppers. Simmer over low heat approximately 20 minutes.
Cut 5 peppers in half, remove seeds and membranes.
Place peppers into a casserole dish, side by side, layer meat mixture with parmesan cheese, ending with cheese.
Bake at 350°F for approximately 30 minutes or until browned and bubbly as desired.
