Cream of Broccoli Soup

1 litre low sodium chicken broth3 cups fresh or frozen chopped broccoli1/2 cup chopped onion1 large potato, peeled and chopped1 can non-fat evaporated milk4 oz Velveeta cheese, cubed
Combine first 4 ingredients in large saucepan, bring to a boil then simmer until potato and broccoli are well cooked.
Puree with blender or hand blender until smooth. Add milk and cheese. Stir over low heat until cheese melt. Try not to let soup boil after adding milk, it will curdle. A quick mix with the blender will help if this happens.
Makes 6 -1 cup servings
