Lime and Peanut Jasmine rice

Ingredients
* Water, tap, 2.5 cup (8 fl oz) * Limes, .5 fruit 2 thick slices * Ginger Root, 2 slices (1" dia) * Salt, .5 tsp * White Rice, jasmine, long grain, 1.5 cup * Butter, salted, 2 tbsp * Peanuts, dry-roasted, salted .25 cup 1/2 tbs lime zest2 chopped green onions
Directions
Boil water, lime slices, ginger and salt. Add rice and return to boil. Cover and simmer 18 minutes. Remove from heat, add butter, lime zest, onions and chopped peanuts. Great with grilled salmon and baby bok choy with ginger.
