Susan's Ricotta Pudding

1 15 oz container fat free ricotta cheese1/4 c. fat free milk1 1oz pkg sugar free/fat free instant pudding mix1/2 c. Cool Whip Free
In a food processor with steel blade place ricotta cheese. Process until completely smooth. Add skim milk and pulse until mixed. Add pudding mix and process until throughly mixed. Mixture will be very thick. Divide into 4 equal serving dishes. Chill. Top each with 2 T. of Cool Whip Free before serving. Makes 4 -1/2 cup servings.
Any flavor of instant pudding mix will work. Our favorites are Chocolate Fudge, Lemon, and Pistachio (which tastes like cannoli filling YUM!)
