Ground Turkey Breast Stuffed Beppers

4 yellow or orange bell peppers1.35 pound ground turkey breast (alter to package size available if needed)1 cup uncooked brown rice1 medium sweet onion8 cloves garlic15 oz. can tomato sauce1/4 cup parmesan cheesepepper, cumin, ground bay leaves, oregano, whatever spices you like
Cut tops off peppers and clean out seeds, set aside. Mix half the tomato sauce and all the other ingredients in a bowl. Fill the peppers and place in crock pot (or baking dish?). Put the top back on the stuffed peppers. Pour remaining tomato sauce and a cup of water into the pot. Cover and cook until done, several hours on low or less on high.
