Fried Rice

Ingredients
3 cups cooked rice2 boneless, skinless chicken breasts, cooked and cubed4 green onions, chopped3 carrots, chopped1 cup frozen peas1 1/2 Tbsp soy sauce2 large eggs, beaten1 pkg fried rice seasoning
Directions
Heat oil in wok or large skillet. Add onions and carrots and stir fry 3 minutes. Add rice and stir fry 1 minute. Add fried rice seasoning and soy sauce. Stir fry 2 minutes. Add chicken and peas. Stir fry 2 minutes more. Make well in center of pan and add egg. Scramble egg until cooked (about 3 minutes). Stir well to combine.

Makes 5 servings.
