Rice Florentine

Ingredients
1 Cup White Rice2 Cups Chicken broth, or 2 cups water and two chicken cubes1 Cup Fresh Spinach, chopped2 ozs Asiago cheese, grated1 tbsp Olive oil
Directions
Bring chicken broth (or water and broth cubes) to a boil, add rice and olive oil; steam until done. Meanwhile, chop spinach and Asiago cheese and set aside. When rice is done, stir in spinach and cheese. Serve hot. Makes 8, 1/2 cup servings.
