Greek Potatoes

3 lb bag, small red potatoes2 cups- low sodium, organic chicken broth1/2 stick butter, cut into small pieces1 tsp basil1 tsp marjoram1/2 tsp curry powdersalt and pepper to taste
wash potatoes and slice in half with cut side facing down in large baking dish.
pour chicken broth into dish*
spread pieces of butter out over the potatoes
sprinkle with spices.
bake in 350 degree oven for approx 30-45 minutes or until potatoes are fork tender.
makes 8- 6oz servings.
Since you are not actually eating all of the brother but rather just cooking in it, this dish doesn't have as many calories as indicated, but you do need this liquid level to properly cook the potatoes and give them a nice flavor.
