Broccoli Cheese Soup

Ingredients
5 Cups Fresh Broccoli - chopped as you like it12 oz Velveeta 2% - cut in chunks8 oz Sharp Cheddar - shredded2 c skim milk1/2 c butter1 medium onion chopped1/2 c floursalt, pepper, garlic powder to taste
Directions
Saute Onion in butter in a saute pan over medium heat until onions are tender. Meanwhile take chopped broccoli and boil in chicken broth until tender. Slowly add flour to onion and butter in saute pan, stir constantly. Cook about 5 mins. Then slowly add milk, stirring constantly (let the roux cook on low for a couple minutes.) Next add shredded cheese, stir until melted. Finally add velveta, stir. Add ingredients in sauce pan to the broccoli and chicken broth. Simmer on low heat until cheese is completely melted and all flavors are blended. Add salt, pepper, and garlic powder to taste. Makes about 12- 1 cup servings.
