Mushroom and Spinach Strata

Ingredients
nonstick cooking spray12 slices Ezekiel 4:9 bread2 cups sliced fresh mushrooms2 cups diced yellow onion3 cups fresh spinachsalt and pepper to taste (1/8 tsp of each)2/3 cup lowfat cottage cheese2/3 finely grated part-skim mozzarella cheese5 eggs, beaten2 1/2 cups nonfat milk1 tbsp mustard1 tsp nutmeg
Directions
Spray nonstick skillet with cooking spray. Cook onions over medium heat with lid for 3 minutes. Add mushrooms and cover for 2 minutes. Stir. Add spinach over top, cover, and cook 3 minutes. Stir and set aside.

Spray 9X13 casserole dish with cooking spray. Place 6 slices of bread in bottom. Cover with half of veggies. Spread with cottage cheese. Place another layer of bread and cover with rest of veggies. Sprinkle with mozzarella cheese.

Stir together eggs, milk, mustard, nutmeg, salt, and pepper. Pour over layers in casserole. Cover and place in fridge overnight or until ready to cook.

Preheat oven to 350 degrees. Bake uncovered 1 hour or until bubbly. Serve immediately.
