Hot Chicken Curry

Ingredients

1 medium onion, chopped1 clove garlic, minced12 oz or about 2 boneless skinless chicken breasts2-4 Tablespoons hot curry paste 1 (14.5 oz) can diced tomatoes1 can of water1.5 green peppers, sliced1 medium potato, dicedBrown rice, basmati rice, white rice, or couscous
In a large nonstick pan brown the onions and garlic
Add the chicken, browning it on all sides
Stir in the curry paste
Pour in the tomatoes, fill the can up and pour in the water
Toss in the peppers and potatoes
Turn to simmer, cook 45 or so minutes until thick
Serve over lots of rice with naan bread to help cut the heat!
***This recipe is calculated for 3 tablespoons of curry paste, this can be adjusted depending on how hot you want the curry***
