Carrot Pumpkin Raisin Muffins

Ingredients
2 cups whole wheat flour1 cup white flour1 tsp salt4 tsp baking powder1 tbsp pumpkin pie spice1/2 cup wheat bran3 packets Stevia sweetener1 cup honey3 egg whites1 cup shredded carrots1 can (1 2/3 cups) pumpkin puree1/4 cup canola oil1 cup raisins
Directions
Mix dry ingredients (flour, salt, spice, baking powder, bran, stevia) in one bowl. Mix moist ingredients (honey, egg, carrot, pumpkin, oil) in a separate bowl. Combine moist and dry ingredients and add raisins. Coat muffin tin lightly w/ nonstick cooking spray. Fill muffin tins 2/3 full. Bake 25-30 min at 350 degrees. Makes two dozen muffins.
