eggplant & asparagus goodness

Ingredients
Eggplant, fresh, 5 cup, cubes (remove)Asparagus, fresh, 4 cup (remove)Garlic, .5 cup (remove)Onions, raw, .25 cup, chopped (remove)*Azumaya Tofu, Extra Firm, 7 oz (remove)Star Olive Oil w/Garlic, 2 tbsp (remove)Kraft Tuscan House Italian Salad Dressing, 8 tbsp (remove)
Directions
preheat oven to 375, in a pan, mix asparagus, eggplant and 1/4 c. garlic let cook approx 15mins.

sautee remaining garlic, onion in pan with tofu. when browned, add to mixture and salad dressing to eggplant & asparagus. bake an additional 10 mins
