Rice with Lentils (Gujarati Daal Chaawal)

Ingredients
Daal1/2 C Toor daal2 T olive oil5 curry leaves1 onion sliced2 t ginger/garlic paste1/2 t green chillie paste1 tomatoe chopped1/2 t cumin powder1 t coriander powder1/4 t turmeric1 t salt Chaawal/Rice4 C cooked Basmati rice
Directions
Wash then cook daal/lentils in pressure cooker with about 1.5 cups water. When done (about 15 min) cool then blend in blender jug or using a handheld blender.

Fry onions and curry leaves in oil until lightly golden. Turn down heat then add the chilli and ginger/garlic. now add the tomatoe and the rest of the spices. Cook 'till tomatoe is well mushed then add the blended daal adding more water if necessary. Simmer for a few minutes. You can add some garam masala at this point if desired.
Garnish with cilantro and mint before serving.

Serves 4 = 1 cup of rice with 1/4 of daal recipe.
