1 1/2 c whole wheat flour1/4 c Splenda Brown Sugar blend1 tsp baking powder3/4 tsp baking soda1/2 tsp salt1 tsp ground cinnamon1/2 tsp grated nutmeg2 tbsp ground flax seed1/2 c Egg Beaters1/4 c skim milk2 small- med bananas, mashed1/3 c unsweetened applesauce1 tsp vanilla extract1/4 c chopped pecans
Makes 12 regular sized muffins
Preheat oven to 375.
Mix first eight ingredients, all dry except nuts, in a large bowl. In another bowl, combine the eggs and milk, stir in bananas, applesauce and vanilla. Stir the wet into the dry, fold in nuts. Spray muffin tin with non stick spray. Fill each cup about 3/4 full.
Bake for about 20 minutes, or until a wood toothpick comes out clean. Cool on a wire rack.
