Savory Moroccan Soup

Ingredients
3 c low sodium chicken or vegetable stock1 can (14.5 oz) no salt added diced tomatoes with juice1/4 c canned chickpeas rinsed and drained1 c zucchini, sliced into half circles4 artichoke hearts cut in half (frozen or packed in water and drained)1/2 c whole wheat couscous1/4 c fresh parsley, chopped1/4 c raisins2 scallions, thinly sliced (including green tops)1/4 tsp cinnamon1/4 tsp cayenne pepper1/2 tsp basil1/2 tsp oregano
Directions
Bring stock plus 1 cup of water to a rolling boil. Reduce heat, add remaining ingrediants, and simmer uncovered about 5-7 minutes. Add salt and pepper to taste and serve.

    I added some curry powder, tumeric & cumin as well as some mushrooms. I'd suggest adding a few more raisins than called for in the original. I found that their sweetness played well off of the spice. - 8/10/11
