Easy Chicken Tetrazzini Casserole

Ingredients
1 lb. chicken breast(spices for seasoning chicken)1 small Velveeta Cheese (Light)12 oz Barillia whole wheat thin spaghetti (or multigrain)1 can Rotel (I sometimes use 2 cans)1 can 98% fat free cream of chicken soup1/2 cup sharp cheddar cheese (low fat)
Directions
In a large pot of boiling water seasoned with salt, pepper, garlic power and onion powder place (or use fresh garlic and onion minced) place chicken and cook gently til done (about 20 minutes)
Remove chicken from water and return water to a boil.
Add pasta and cook til aldente
Cool chicken and cut or shred into bite size pieces
In a small pot put soup, cheese and Rotel and melt slowly together.
Drain pasta and place in a 9X13 casserole dish and mix in chicken and cheese mixture.
Sprinkle cheddar cheese on top.
Bake at 350 for about 15 minutes til bubbly and serve with some crusty bread.
