Cauliflower Sandwiches- SUPER EASY!

Ingredients
! bag of frozen cauliflower (you can also use one head of fresh)2tsp yellow mustard 1.5 tbsp Light Mayo.5 tsp celery salt6 slices of rye bread1 cup grated/shredded carrots
Directions
Boil cauliflower until slightly overdone- nice and soft
Mash cauliflower with fork or potato masher
Add mustard, mayo, and celery salt and mix well.
Toast rye bread.
Spread a third of the cauliflower mixture on to each of 3 slices of bread.
Top with grated carrots and other slice of bread.

*Sometimes I use dijon mustard instead of yellow. Both ways are really tasty :)
