Scrambled eggs with Mushrooms, Onion & Garlic

Ingredients
1/2 cup cooking onion, diced1/2 cup mushrooms, sliced1 tsp garlic, diced6 Tbsp egg white
Directions
Serves 1

Heat small skillet on high for 1 minute. Reduce heat to medium and spray with cooking spray. Saute onion 3 minutes, stirring occasionally. Add mushrooms, saute 3 minutes, stirring occasionally. Add garlic, saute & stir one minute. Add combination of spices to your taste. (eg. salt, pepper, thyme, chives, parsley, ginger, coriander, nutmeg. basil) Mix egg whites with a bit of turmeric if desired. Add egg whites to onion, mushroom, garlic mixture and scramble until done.

Multiply recipe as needed.
