Mexican Casserole

Ingredients
16 oz ground beef 93% Lean6 oz torilla chips6 oz Uncle Ben's Country Inn Mexican Fiesta Rice1 can (10.75 oz) cream of mushroom soup1 cup tomatoes, canned with green chilies1 cup onions, chopped1 package (12 tsp) taco seasoning mix (40% Less Sodium)1 cup cheddar cheese, shredded
Directions
1. Preheat oven to 350 degrees.
2. Start Uncle Ben's Rice as directed on package.
3. Brown ground beef and drain thoroughly.
4. Chop onions.
5. Add onions to pan with ground beef and cook until clear.
6. Add one package of taco seasoning (40 % less sodium) mix to the ground beef and onions. Follow directions on package.
7. Mix Cream of Mushroom soup and 1 can of tomatoes and green chili peppers in medium bowl.
8. Add cooked rice to the ground beef mixture on stove. Mix in Cream of Mushroom soup and tomatoes.
9. Spread a layer of tortilla chips on the bottom of a 9x13" baking pan.
10. Spread half ground beef mixture on layer of chips.
11. Layer chips on top of beef mixture. Spread remaining half on top of chips.
12. Sprinkle cheddar cheese on top.
13. Cover, and bake for appx. 20 minutes, or until mixture is bubbling.

    i got the wrong kind of mexican rice i got old elpaso rice instead of the uncle bens its a good thing i tasted the rice first...dont try it i threw it in the trash all i had was white rice so i cut the rice amount down and it turned out great...this is an awesome dish!!! - 2/20/12

    Made this tonight and the family loved it. I did use Uncle Ben's boil in bag brown rice instead of rice listed simply because I did not have the other in the house. Wonderful and simple to make. - 3/15/10

    This was great! I made it last night and even my husband who hates "diet food" said it was wonderful. He liked it better than my normal high cal mexican casserole. I used the low cal cream of mushroom and 2% cheese and he didn't even notice :) - 3/5/10

    I absolutely love this recipe! I have made it over and over again for my family. I find it's a great comfort food without feeling sinful. I will mix it up sometimes when I make it, instead of ground beef I use ground chicken/turkey other times I used different low sod cream soups (e.g. chicken etc.) - 10/2/08

    My husband and I both really loved this dish. I added a whole can of tomatoes (instead of just 1 cup) on accident and it still turned out great. Pretty decent nutritionals for a dinner. The portion is pretty hearty so it fills you up. Yum! - 6/10/08

    sounds good, but I'm skeptical whether it's good for you. Lots of sodium, calories, and carbs. Make my own taco seasoning, so that will lower the sodium. I'll try it. - 6/1/08
