Garlic and Dill Creamy Seafood Vegetable Rissotto

Ingredients
2 cups cooked brown rice14 small Bay Scallops (US Farmed)1.5 tsp Canola Oil1.5 tsp non-hydrogenated margarine1 cup lowfat buttermilk1-2 cups mixed vegetables1 tsp Garlic1 tsp dill weed1/2 tsp salt
Directions
Makes 2 servings

1. Prepare brown rice
2. Melt margarine in oil on medium-high heat.
3. Add 2 cups prepared brown rice.
4. Add Scallops.
5. Add Vegetables.
6. Add Seasonings and salt.
7. Add buttermilk.
8. Cover and let simmer down until sauce is thickened. Stirring occasionally.
9. Turn heat to low and let it sit for a few minutes.
10. Turn off and let cool and set a few minutes, then serve.
