Talk About Good: Italian Stuffed Artichokes

4 large artichokes5 stale french bread rolls1 cup of shredded romano cheese1 bunch of chopped parsleyolive oil
1. prep artichokes-cut stem off flat so that artichokes stand straight up; trim the top 1/2 inch; trim each leaf 1/4 inch; soak in cold water while building stuffing and let dry on paper towels
2. stuffing-fresh bread crumbs (can sub for progresso italian)....blend day old stale bread in food processor with garlic, cheese and parsley; in medium skillet-brown bread crumbs, start from the bottom of artichoke and fill to the top....push down (to spread leaves) and fill top of artichoke with bread crumb
3. place artichokes in deep pot....drizzle with olive oil and steam in 1 inch of water for 30-45 minutes until leaves are tender
