Sauce for Pasta or Rice

Ingredients
300 gms lean minced beeflg can diced tomatoes1onion diced2 carrots grated1 cup grated zuccini2 cloves of garlic crushed (or to taste)1 tablespoon or more of dried or fresh Italian herbs1 teaspoon port
Directions
In a non stick pan spray some olive oil cooking spray and cook the onion until soft. Add garlic and the carrot and Zuccini and cook for a few minutes until they start to soften. Romove from pan. Brown the mince using a little more spray if needed. Return the vegetables to the pan add the tomatoes, port and the herbs. Bring to the boil, reduce the heat ,cover and simmer for two or more hours. Serve over boiled rice or pasta.
