Helathy Cheesey Chicken Tetrazini

cooked chopped chicken about 2 cups2 onions1 package of fresh mushroomsfresh or frozen broccoli, rough choppedolive oil 1 tablespoonsalt and pepper1 package of shredded cheese (any type I use cheddar often)1 can condensed cream of mushroom soup (can use the low fat one)1 can of condesed cheddar soup (or velveeta or cheese whiz)Cooked white rice (about 2-3 cups).
1. Cook rice.
2. Meanwhile, prep and steam broccoli (I use a microwavable steamer)
3. Sautee onions and mushrooms in oil salt and pepper. Add other vegetables if you like (celery, carrots, or zucchini work well)
4. cut up chicken.
5. spay large glass oven-safe baking dish with pam.
6. Combine all ingredients in glass dish.
7. bake for 35-45 minutes. ( can be made in advance and refrigerated, but bake for 1 hour instead).
Makes 8 or more servings, depending on the portion you give.
