Vegetarian Black Bean Chili

Non fat cooking spray of your choice1 can fire roasted crushed tomato (Muir Glen)1 can diced tomato2 cans black beans (I use one can regular and 1 can w/ cumin and chili pepper spices)1/2 red onion diced1/2 white onion diced5 cloves garlic (or to taste)4 tsp cumin (or to taste)2 tsp saltMcCormick Spicy Montreal Steak Seasoning to taste
Makes approximately 6 ~1 cup servings
Spray medium pan with cooking spray and heat over medium heat. Add white and red onion and saute for 2 minutes, then add garlic. Saute until onion is soft. Add spices and mix well. Add both cans (undrained) of tomato and both cans (undrained) of black beans. Mix together well and turn heat to medium low. Simmer for about 30 minutes.
Top with diced avocado, cheese or yogurt. I use all three!
