* Black Beans, 3 cup * *Bell Pepper, Green - 1/2 c., chopped * *Onion - raw, .5 cup chopped * White Rice, long grain, 2 cup * Cilantro, raw, 3 tbsp chopped * Butter, salted, 4 tbsp * *Coconut Milk, 3 cupsSpice Mix * Pepper, black, .5 tsp * Salt, .5 tsp * Chili powder, .25 tbsp * Celery seed, .25 tsp * *Coriander, ground, .25 tsp * Nutmeg, ground, .25 tsp * *Onion powder, .25 tsp * Paprika, .25 tsp * Garlic powder, .25 tsp
Combine everything in large saucepan and bring to slow boil over med. flame. (Use flame tamer under pot while simmering if you can). Cover, reduce heat to lowest setting and simmer 20-30 min. If needed, add Fat Free chicken broth, 1/4 c. at a time if it still sticks. Fluff w. fork before serving.
