Ingredients
Diced Tomatoes,28 oz can Crushed Tomato, , 2 28 oz cans Puree Tomato 28 oz can Chicken Broth, 2 cup Onions,1 large dicedGarlic, 3 cloves (or to taste) mincedCelery, raw, 2 stalk, diced with leaves if possibleRanch dressing mix, 2 packets of dry mixBacon,1/2 pound diced and cooked fairly crisp, reserve a Tbl of drippings
Directions
Cut raw bacon into small pieces and put on a baking sheet to cook in oven at 350 for about 15 minutes or so. While that cooks chop all veggies. Once bacon is done pour a small amount (about a tablespoon) into a large soup pot. Saute vegetables until soft. Add canned tomatoes, bacon, and dressing mix and enough chicken broth to make it "soup-like" (I rinse my tomato cans with the broth, about 1/2 cup per can). Stir well to incorporate dressing. Allow to simmer on a low heat for about 30 minutes. Add pepper if desired. This is delicious served with nice crusty bread and butter. It could also be used as a sauce on pasta if you let it thicken a bit.
Makes about 10 1-cup servings (give or take)
