Curried Beef and Potatoes

1 Tbsp canola oil3 medium potatoes, scrubbed, quartered and sliced (I don't peel the skins, so nutrition is probably a little better than noted!)1 medium onion, sliced1 large or 2 medium cloves garlic, finely minced8 oz lean (90%) hamburger1 Tbsp curry powder (I used Shan Meat Masala mix)1/4 cup shredded coconut (unsweetened if you can, calculated with sweetened because that's what I have)
Makes 3 10-12oz servings (about 1 1/2 cups)
Wash, quarter and slice the potatoes. Put oil in lidded skillet. Add potatoes, stir well to coat. Fry on med-hi heat, stirring occasionally so slices brown, but don't burn. Putting the lid on between stirring will help the potatoes cook faster. When the potatoes are about 1/2 cooked, add the onions and 2 tsp curry powder. Stir well. Cover while you mince the garlic. Mix remaining tsp curry with ground beef. Move the potatoes to one side of the pan, add the ground beef so it can brown. Bring potatoes over the top of the beef, and spread everything out so the beef is mostly still on the bottom. Sprinkle garlic on top. Cover and cook a couple minutes longer, add coconut milk or shredded coconut, stir well. Turn off heat, add cheese, cover, let cheese melt, and serve.
I'm sorry I can't give cooking times - it really depends on your potatotes! Some cook quickly, others quite slowly.
