Pan fried fish with salsa

Ingredients
4 Red ripe tomatoes diced1 lage onion diced1 tsp red pepper or cayenne1 tsp oregano2 fillets codsalt and pepper to taste1 tbs olive oil
Directions
To make the salsa:
Add oil to pan and fry onions till transparent. Add pepper and then tomatoes. Add oregano. Cook for 10 minutes until tomatoes are cooked. Add salt and pepper to taste

Salt and pepper fillets. Fry on both sides till brown (approx 2 minutes). Pour on salsa sauce and put in the oven for about 5 minutes.

    Very nice meal. We used Talapia (that's what we had on hand), 1 cup of onions and 1 cup of tomatoes. Oven cooked at 350... turned out beautifully, nice and spicy. - 7/8/09
