Shrimp Stir Fry

4 servings of brown rice (usually 4 cups)5 servings of shrimp (5 cups)--We bought frozen2 tsp canola or vegetable oil1 cup chopped fresh or frozen broccoli1 cup green or red bell pepper or combo of both1 medium carrot, chopped1 cup diced zucchini1 cup diced yellow squash.75 of an onion diced4 tablespoons stir fry sauce (or sub soy, teriyaki, etc. sauce)
Thaw frozen shrimp by placing in cold water.
Cook rice according to directions on box (usually takes ten minutes).
While the rice is cooking, heat the oil in a pan. Add carrots and onions for 2-3 minutes, then add rest of veggies for another 5.
Add shrimp for another 5 minutes. Add rice and stir fry sauce and let simmer for 3 minutes.
Makes six 1.5 cup servings!
