Shrimp & Pasta w/ Sundried Tomatoes & Capers

1 lb - Shrimp, raw1/4 tsp - Salt1/4 tsp - White Pepper2 1/2 cups - Pasta; Whole Grain Penne, dry (Barilla)1 tbsp - Olive Oil2 cloves - Garlic, minced1/4 cup - Sundried Tomatoes, Julienne Cut (not in oil)3/8 cup - White Wine2 tbsp - Basil3 tbsp - Capers, drained3 tbsp - Parmasean Cheese, shredded
1) Devein & deshell shrimp.
2) Season lightly with salt and white pepper.
3) Cook Pasta according to package directions.
4) In medium to large skillet place olive oil, garlic, and sundried tomatoes and cook for 5 minutes.
5) Add shrimp and cook in this pan until done, 2-3 minutes.
6) Add Wine, basil and capers. Cook for an addition 2-3 minutes (till wine slightly reduces).
7) Combine shrimp mixture with the drained pasta, add parmasean cheese, and mix well. Serve.
