Spicy Ginger Chicken with Peanuts

3 Tbsp Soy Sauce1 Tbsp Dry white wine1 lb. chicken breast, cut into bite sized pieces1/4 cup water1Tbsp Sugar1 Tbsp White Vinegar1 tsp cornstarch1 Tbsp vegetable oil2 dried red chile peppers, seeded1/2 cup sliced green onions1 Tbsp minced peeled fresh ginger4 garlic cloves, minced1 cup peanuts
Combine 1 Tbsp soy sauce, wine and chicken in a ziploc bag. Marinate in fridge for at least 1 hour.
combine 2 Tbsp soy sauce, water, sugar, vinegar & cornstarch in a small bowl.
Heat oil in wok or non-stick skillet over medium-high heat until hot. Add chiles; stir fry 1 minute. Add chicken mixture; stir-fry 3 minutes. Add green onions, ginger & garlic; stir-fry 1 minute. Add cornstarch mixture and peanuts; bring to a boil and cook 1 minute, stirring constantly. Serve chicken mixture over steamed rice.
Makes approx 6 1/2 cup servings.
