Mini Vegetable Fritattas

Ingredients
8 eggs, whisked together1 onion, sliced1 bell pepper, chopped1/2 yellow squash, chopped2 green chilis, canned, choppedextra virgin olive oil1/4 c cheddar cheese, shredded1 small tomato, chopped and seeded
Directions
Preheat oven to 350
- Wash and chop all vegetables.
- Sautee all vegetables until soft
- Spoon a small amount of vegetables into the muffin cups
- Whisk eggs together, season with salt and pepper
- Pour egg mixture over vegetables
- Mix each cup gently
- Sprinkle a small amount of cheese over each muffin
- Bake about 12 minutes, or until toothpicks come out clean
