Thick Barley and Vegetable Soup

2 tbsp olive oil1 large onion, chopped1 large carrot, chopped1 large leek, chopped4 cups of vegetable broth3 bay leaves5 tbsp whole grain barley1 large handful parsley
Heat olive oil. Add onion, carrots, and leeks and heat gently for 5 minutes. Add vegetable stock and bay leaves. Bring to a boil and add barley (whole wheat is better). Simmer for 1 hour. Remove bay leaves. Serve with parsley sprinkled on top. Makes 4 servings.
