Roasted Red Pepper and Lentil Soup

Ingredients
1/3 cup dried brown lentils1/2 onion, chopped2 small-medium size carrots, choppedAbout 1/3 jar of roasted red peppers (roughly 3/4 cup)1-2 tbsp minced garlic1 chicken bouillon cube2-4 tbsp red wineSpices to taste:RosemaryBasilFennelCayenne Pepper
Directions
Put the lentils, onion, carrots, peppers, garlic, and bouillon in a pot and cover with water. Add spices and a bay leaf, if desired.
Bring to a boil and reduce to a simmer until everything is soft. Puree with an immersion blender or in batches in a food processor or blender. Enjoy!
