Vegan Spicy Black Bean & Potato Soup

280 grams potatoes, diced175 grams Trader Joe's Soy Chorizo115 grams zucchini, diced1 can black beans, no salt added variety (including liquid)1 handful cilantro1 cup Trader Joe's Low Sodium Vegetable Broth1 tbsp extra virgin olive oil2 tbsp dried basil2 tbsp minced garlic1 tbsp chili powder2 tsp ground cumin
In a pot, brown the garlic in the olive oil. Add potatoes and cook until most of them are slightly browned.
Squeeze the filling of the chorizo into the pan and break apart. Cook until chorizo is sizzling.
Add all remaining ingredients. Raise heat to high and stir constantly. When boiling, lower heat to low and cover the pot.
Simmer for 15-20 minutes or until potatoes are tender.
