Tomato Lentil Soup-Bren85017

Ingredients
1 C lentils4 C water1 chopped onion2 potatoes, cubed2-3 carrots1 bay leaf1-2 tsp dried basil1 tsp oregano2 garlic cloves1.5 C canned diced tomatoessalt to tasteRinse lentils and place in 5 qt pot with water, onions, potatoes, carrots and seasoningsBring to boil than lower heat and simmer covered for about 45 min to an hour till potatoes/carrots and lentils are soft.Add tomatoes and spinach (if desired) then simmer 10-15 minutes. Add salt or celery flakes to taste.Add more water or tomatoes if a thinner consistency is desired!
