Chicken & Black Bean Quinoa w/Salsa

Ingredients
2 frozen, boneless, skinless chicken breasts1 cup chicken broth1 cup frozen corn1 cup black beans, rinsed1 cup white corn and black bean salsa1/2 cup uncooked quinoa
Directions
Cut up frozen chicken breasts into chunks and put in the bottom of crock pot. Add quinoa, broth, corn, black beans and salsa. Set cooking time according to your crock pot.

You can also pre-make the quinoa with the broth. I put this on medium high and it was ready in less than 4 hours.

    At Wal Mart. It used to be under the Sam's Club label but is now under the Great Value label called All Natural White Corn and Black Bean Salsa. Enjoy!
