Chicken Enchiladas with Red Sauce

Ingredients
8 oz. Costco Rotisserie Chicken, cut up.1 packet of Frozen Organic Brown Rice (Trader Joes)1 can Red Enchilada sauce1.5 cups of Trader Joe's Lite Mexican Blend Cheese8 Trader Joe's Flour Tortilla 1 large onion1 tsp. Cumin Powder1 tsp. Garlic PowderSalt and Pepper1 TBS Brown Sugar
Directions
Pre-heat oven to 400 degrees.

Makes 8 servings total.

Cut up rotisserie chicken... set aside.

In large saute pan, saute a large onion in 1 TBS of olive oil, add cooked brown rice cooked chicken and stir to combine.

Add cumin, garlic powder, and brown sugar. Salt and pepper to taste.

Add 1/2 cup of cheese and stir to melt.

Add 1/4 cup of enchilada sauce to bottom of casserole dish and spread evenly.

Take one flour tortilla, and fill with above filling, roll and place into casserole dish. Repeat for other tortillas.

Cover with remaining sauce and cheese (and optional green onions and black olives**)

Cover with tin-foil and bake at 400 degrees for 20 minutes.

Remove tin foil until cheese browns up.

Optional - serve with black beans and a side salad.
