Potato Frittata

1 Large Potato, sliced1/2 of one large onion, sliced1 Tablespoon Olive Oil1-1/2 cup Egg Beaters1/4 cup grated Parmesan Cheese1 Tablespoon CapersSalt and Pepper
Preheat oven to 400F.
In an ovenproof skillet, heat 1 tablespoon of olive oil over medium-high heat. Add potatoes and onion and saute until potato and onion are slightly browned. Reduce heat, cover the skillet, and cook until potato is tender, about 15 minutes. Mix in capers, and sprinkle with salt and pepper to taste.
Remove potato and onion from skillet and wipe skillet clean.
Heat skillet and spray with Pam. Put potato onion mixture back in skillet, then pour egg beaters over. Sprinkle the top with cheese.
Bake in oven until the top is browned, about 15 minutes.
Cut into wedges. Serves 4.
